Butterscotch Toffee Pudding Pie
You guys. I’m not even gonna lie. This Butterscotch Toffee Pudding Pie may be the BEST pudding pie I’ve ever made.
And it’s got some fierce competition, too. I almost ate this entire Cookies and Cream Chocolate Pudding Pie in one sitting. And I still can’t get my mind of this Best Ever Banana Pudding Pie.
But an Oreo cookie crust filled with creamy butterscotch pudding and crunchy toffee bits is outta this world AMAZING! I’m drooling just thinking about it.
And I was selfish with this pie.
I only took one tiny slice to work so one of my co-workers could try it. She’s a lucky gal. I didn’t want to share any of it but being the nice gal that I am, I figured I’d share it with one person who doesn’t live in this household.
Ken liked LOVED this too. He helped me devour this pie within three days of me making it. Yeah, it lasted that long but there are only two of us in my house. And we did try to have a little control.
I’m beginning to think that pudding pies are my specialty in the sweets sector. I LOVE making them. And eating them, too. Maybe I should write a pudding pie cookbook. Would you buy a pudding pie cookbook?
Seriously, folks. I really want to write a cookbook one day. I have a few ideas running around in my head. Pudding Pies. Healthy Eats. One Pot/Skillet Meals. My goal was to begin a cookbook this year but it isn’t going to happen. So my 2015 goal – start writing a cookbook!

The pie crust may be difficult to remove from the dish when first taken out of the fridge. Allow it to sit out for a few minutes before slicing. Use a pie server for easier removal.Butterscotch Toffee Pudding Pie

Wanting this pie!!! It looks so delicious! What I love about pies like these is how EASY they are too make yet you feel like you are eating something that some fabulous pastry chef created. Awesome recipe!
They are SO easy to make and that is what I love about them, too. Well, I certainly love the way they taste as well. Because I have a hard time not eating all of these pudding pies!

Silly question…do you crush the oreos with the filling in them? Or do you crush only the chocolate cookie part when making the crust (removing the white filling)? Thanks!

Definitely not a silly question! The first time I made an OREO crust, I had to find out how to use them. Crush the entire cookie, filling included. I used my food processor. Worked like a charm.

I’m not sure what I did wrong but my pie never set. I followed the instructions to a t but it was very soupy when I poured the mixture in the pie crust and remained that way. I left it in there over night too :( do you have any suggestions? This is the 3rd time I’ve done this with pudding pies and I’m pretty sure I’m cursed or something.
Are you using regular milk? Did you use the milk measurements in my recipe or did you use the measurements from the pudding box? Let me know so I can try to help!
