Cranberry Mint Quinoa
Have I told you that I like quinoa? This is only the 3rd quinoa recipe that I’ve posted. I will definitely post more. What is it that I like so much about quinoa? Flavor, flavor, FLAVOR. Quinoa has a subtle nutty flavor that compliments many seasonings and foods such as cider vinegar, mint, basil, feta, olives, tomatoes, shrimp and of course, garlic. Quinoa also tastes wonderful by itself. It’s loaded with antioxidants and it’s gluten free. If these aren’t enough to peak your interest in quinoa, perhaps this delicious quinoa recipe will be. This is a Julie original. Yes, I threw this recipe together and tweaked the ingredients until it tasted perfect. Please enjoy the recipe.
Cranberry Mint Quinoa

Ingredients
- 1 cup of uncooked quinoa
- 1 clove of garlic, minced
- 1 heaping tbsp full of chopped mint
- 1 tsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1/4 cup sliced almonds
- 1/2 cup dried cranberries
- 1/3 cup crumbled feta
Instructions
- Prepare the quinoa according to package directions or use a rice cooker following the same directions for cooking rice
- Allow the quinoa to cool
- Combine remaining ingredients with the quinoa and mix well

I need to find an Earth Fare or some more healthy eatings grocery store to get some quinoa! I have been seeing quite a few tasty recipes that I have been wanting to try (including this one, i looooove mint) and I think looking at pictures is not going to settle my craving for quinoa :)
